Default dual quad core xeons

Gentoo will take advantage of whatever the Linux Kernel takes
advantage of. Gentoo will utilize all 8 cores as efficiently as the
Linux kernel allows, and you will be able to run everything under 64
bits. I would recommend using the amd64 media and stages when
installing Gentoo onto your system.
