What are people here using to encrypt (as easy as possible) just one
directory (not a FS)?

One way is using encfs. If you do "yum search encfs" you get:
cryptkeeper.x86_64 : A Linux system tray applet that manages EncFS
encrypted
: folders
fuse-encfs.i686 : Encrypted pass-thru filesystem in userspace
fuse-encfs.x86_64 : Encrypted pass-thru filesystem in userspace
