Using Evolution 3.4.3 when I go into preferences -> account->edit
There is a click option: Make this account my default account.
If I click that and then click apply the next time I edit the account
that option is not clicked (or chosen).
What has gone wrong

Sounds like one of those little bugs. Selecting the default from the
Accounts page seems to work.

Before the latest update, reordering accounts on that page didn't seem
to take, but it appears to work now.
