If you are using the gmail web interface.... After you hit "reply" you will see a
line of links directly below To: It says....
Add Cc Add Bcc Edit Subject Attach a file

(directly after "add CC" and "add bcc")
or better: make a bugreport to google why they think it is good
to hide any useful option from the user and act completly
different to any other mail-client
another option would be install whatever mail-client
and configure it to use gmail via IMAP
