umount external devices

Bonjour,

If I plug an usb HD with multiple partitions on it, I can see onmy desk
as many icons as the number of partitions.

If I ask to unmount one of them (right click on the icon and using the
menu "eject") all the partitions are unmounted. Is this a normal behaviour?

Is there a possibility to unmount the partitions one by one?

Yes: umount <mountpoint>

unmount using command and /dev/path/to/the/partition

Yes. You are ejecting the entire device.
