While in Activities - drag an extra open app into a fresh workspace in
the strip on the right.

I should have said while in Windows, and you can also just click on one
of those unused workspaces and open something there.

There are more serious annoyances awaiting, William.
One app to be acquainted with is gnome-session-manager.
