If you add an overlay partition (similar to how you add a persistent home
partition), you can install updates and new software and have it persist.
You don't recover the space from the initial live image, so you probably
want to get a fresh live image after enough time. But you can also do
that without overwriting your persistent home partition.

JD:

There might be two issues that prevent this:

1. Licensing type conflicts.
2. Patents.

Both are ugly and a real pain, but they are there.

(BTW, this is why Wine does not ship with libmpg123 nor do most Linux
distributions.)

However, I like the idea of including this type of 'stuff' as long as
the list does not get way too long (filling a DVD by itself could be
very easy.)

Tried geany but seams too advanced for my target audience, but an
excellent app that I'll keep installed for myself, thank you for your
suggestion.

Audio and video codecs including flash are preinstalled. We are going
the path of Linux Mint to make user experience best as possible right
out of the box, and for not that means also including few non-open
components. As soon as they become redundant we will drop them for
open source ones. But unfortunately for now there must be few
proprietary pieces in order to make linux destop usable for non geeks
and non developers ie. regular users.

I did a search a few years ago, and I think the patents on mpeg
start to expire next year and continue to expire in dribs and drabs
over the next few years. I suspect that is part of the reason for the
new proprietary video standard being proposed for html5. ;-)

So you should be home free in a couple of years.

Skype is proprietary. Isn't FF already there?

Skype will be installed and Firefox 4.0 beta will be installed but
Chromium will be default browser.

What if I like Gnome and despise KDE?

You have a mixture of Gnome and KDE interfaces. Please pick one....
