Lots of options.
a) Do you really need that splash screen? If not, edit
/boot/grub/menu.lst and remove it from the kernel line. Or uninstall
rhgb altogether.
b) Edit /boot/grub/menu.lst and append a term such as "vga=795" to the
kernel line. [ Note: You will need to do a little experimenting to
find a mode that will fit your particular hardware. For a list of vga
values go to http://www.linuxquestions.org/questions/debian-26/lilo-vga-modes-152575/

Do you have an ATI graphics card? If so, check out bug 382921 and read my comments (https://bugzilla.redhat.com/show_bug.cgi?id=389291). I have a similar problem to yours except, in my case the graphical boot screen is smaller than the physical screen. It doesn't solve your problem but at least you know someone is working on it.
Steve.

If your display is otherwise okay (after you've booted), try giving a
configuration file for RHGB to use (you could give it a copy of
your /etc/xorg.conf file).
[tim@suspishus ~]$ less /usr/share/doc/rhgb-*/HOW_IT_WORKS
"... If a specific /etc/rhgb/xorg.conf configuration file for X under
rhgb is provided then it will be passed to the X command line to allow
a specific configuration for X boot...."
Depending on your graphics chipset, you may also want to play with the
915 resolution package, though I thought that sort of hackery wasn't
needed anymore. See: http://www.geocities.com/stomljen/
