Default Unison-gtk profiles removal

Look in /home/<user>/.unison.

Each profile is represented by a plain text file such as <profile>.prf.

You can edit them or delete them there.

You might want to look at the man pages for unison (man unison) and at
/usr/share/doc/unison/.
